Chef de Rang

We are looking for a Chef de Rang to join the Food and Beverage team working with Ryan Humphrey our F&B Manager, his Restaurant Manager for the Dining Room and Head Waiters running our Michelin starred Dining Room and Grey’s Brasserie.

The role of Chef de Rang will be mostly working in the Dining Room, but also managing service in Grey’s and banqueting.

We have a new executive chef working for us, Niall Keating, who will work to retain our  Michelin Stars, we have 4 AA rosettes and have recently been awarded 8 out of 10 in The Good Food Guide.  Ranked 19th out of 50 in the 2016 Waitrose Good Food Guide.  New menus for  both restaurants were launched in the middle of January 2017.

The team covers the following operations:

• The Dining Room - 40 covers, open from Wednesday to Sunday dinner only, with three seasonal tasting menu’s
• Grey’s Brassiere -50 covers, open 7 days a week lunch and dinner offering a lunch and a la carte menu
• Small private dining room - up to 30 covers offering various party menus
• Afternoon tea - 20 covers, open 7 days a week.
• Hotel lounge menus
• Corporate events, exclusive use events and weddings of all sizes
• Room service menu
• Wine, champagne, cookery masterclass and other hotel promotional events throughout the year

Skills and experience:

• Stable cv with experience in a 4/5 star or Michelin environment
• Ability to communicate with team in a professional manner
• Able to teach and train the team in a positive manner
• Fluent in English – both oral and written
• Understanding of standards and regulations required in a restaurant
