Bars Manager - The Ned, New Opening

Reporting to: Food and Beverage Director

Role Based: The Ned, Poultry Street, London

We are now recruiting for our new hotel that is one of the most exciting upcoming openings by Soho House & Co and Sydell Group.

Hotel Overview

Originally a bank, the Grade-1 listed building has been developed and restored to hold 252 hotel bedrooms, twelve restaurants and bars, a member’s club, a gym, Cowshed spa and two swimming pools, as well as six dedicated event spaces.

Restaurants at The Ned

Eight public restaurants in the former Grand Banking Hall serve food that spans the globe, from Britain to Northern Italy, North America to China.

The offering includes a Cecconi’s City of London, sister restaurant to the Cecconi’s in Mayfair, Berlin, Istanbul, Miami Beach and West Hollywood. Cecconi’s City of London will serve handmade pasta, pizza, seafood and Italian inspired dishes.

There’s a further restaurant and two bars up in Ned’s Club Upstairs, as well as a bar in the bank’s original vault.

The Role:

As Bars Manager you'll be responsible to oversee all bars operations including managing staff, ensuring product and service standards are met and implementing and maintaining procedures for maximum operating efficiency.

Main Duties

  • To ensure that all beverages are prepared and served in accordance with bar and company service standards.
  • To ensure that all guests experience is priority at all times following The Ned ethos.
  • To ensure guests expectations and needs are met at all times.
  • To train the bar managers of each outlet to be able to meet these standards & expectations.
  • To direct the bar mis en place standards and implement processes that ensure bar mis en place is completed for services.
  • To help & assist with any functions that may be help within The Ned.
  • To assist & help create & implement seasonal drinks menus that are aligned with the site and company expectations and are financially profitable.
  • To ensure all menus online/offline are accurate and up to date at all times.
  • Set departmental targets and objectives that maintain and improve people, product and efficiency.
  • To manage outlet Bar Manager on a day to day basis through setting achievable & realistic objectives to help improve product & people.
  • To ensure stock takes happen weekly, take part in stock takes on a regular basis, thoroughly understanding of beverage costs and budgets and understand their impact on the business
  • To ensure that the right equipment and glassware is used in each site & in accordance to company standards, that equipment stock takes happen monthly and to attend them on a regular basis.
  • To be aware of each bar outlet’s financial targets and take positive action to maximize bar sales and generate revenue.
  • To ensure cleanliness standards and procedures for the Bar and Beverage teams & their areas are in accordance with site, company and legal health and safety standards.
  • To ensure that necessary risk assessments are completed for all bar employees.
  • To attend daily site briefings and manager’s meetings and ensure open, effective communication between the bar and other departments.
  • To help assist with bars rotas that meet business needs and are aligned with wage budgets.
  • To develop the Bar Managers & Senior Bar teams through on boarding, on the job training, holding training sessions, House Tonic trainings and implement further development opportunities.
  • To ensure that the bar teams are appropriately groomed and wearing the correct uniform in accordance with company standards.
  • To motivate, support and direct all Bar teams and lead the team by example.
