Restaurant Manager - The Roxburghe Hotel and Golf Course

This unique hotel with 22 bedrooms, a championship golf course and the full range of sporting pursuits on the Roxburghe Estates, offers a getaway destination little more than an hour’s drive from both Edinburgh and Newcastle.

General Duties:

  • Public spaces, heating, lighting, cushions, fire, restaurants (are we ready to receive guests?)
  • Boilers
  • Toilets
  • Staff members presentable and present
  • Outside area tidy
  • Rooms Ready
  • Mail to be done, cleared daily
  • Dining rooms ready
  • Still room duties complete
  • Staff presentable and present

Main Responsibilities:

  • Wine/bar cellar management and cleanliness
  • Wine and bar ordering
  • Bar, ensure in order including all equipment
  • Cleaning list
  • GP cost control and wastage
  • Cigars and humidor
  • Wine list presentation/menu covers/black spots
  • Still room including cleanliness and organisation
  • Training of restaurant staff along with the Duty Manager’s guidance
  • Ordering dry stores (signed by GM) including napkins, cocktail sticks, paper napkins etc
  • Ordering stores from Chef
  • Cleaning rota including deep cleaning
  • Checking of equipment
  • Tea and coffee ordering and control
  • Dining room linen, stock and control

The above list is the main duties you are responsible for.  The above list is to be used as a guideline only and is not an exhaustive list.  Overall a Restaurant Manager is there to support the General Manager with all aspects of the hotels operations and as a member of staff of The Roxburghe you are expected to ensure the smooth running of the hotel at all times.  Should you go on days off or holidays please ensure you have handed your duties over to another manager.
