Bar and Functions Manager - London

Reporting to: Food and Beverage Manager

Full Time Contract – 40 hours per week on a rota basis to include weekends

Job Purpose:

To assist with the management, control and development of the Food and Beverage (F&B) department with specific responsibility for the Bar and Function sections. Management of the Bar and Functions team includes recruitment, performance management plus the training and development of staff, achievement of all financial targets and the maintenance of high service delivery standards.

Key Responsibilities:

  • Directly manage the operation of the Club Bars and banqueting operations as well as any other catering offers developed within the Club and ensure that agreed standards are maintained.
  • Along with the Food and Beverage Manager and Assistant Manager, to ensure the smooth running of Club and external events. This would include meetings with organisers, managing schedules and staff as well as the smooth running of the function.
  • Working with the Food and Beverage Manager to create new ideas in the department to further improve service standards and the overall operation.
  • Assist with the recruitment, induction and training of the F&B team.
  • Ensure that the highest standards of care to members are provided by improving and maintaining standards of F&B service throughout the Club.
  • Assist with the control of the F&B department P&L with responsibility for controlling cost and developing revenue streams in the Bar.
  • Contribute to the implementation and management of processes relating to stock and cash control at the site.
  • Liaise with and assist with the sourcing of suppliers for F&B services.
  • Assist with the development and innovation of F&B offers throughout the Club to meet the needs and demands of the membership.
  • Liaise with other department heads and colleagues to ensure effective and efficient management of the Club.
  • Ensure the Club meets Health and Safety and Food Safety Management requirements at all times.
  • In liaison with the Food and Beverage Manager and Assistant Food and Beverage Manager, plan departmental rotas for F&B areas, including monitoring and controlling hours and overtime expenditure for staff.
  • Deputising for the Food and Beverage Manager in his absence.
  • Deputising for the Food and Beverage Manager in their absence if the Assistant Manager is not present.
  • Ensuring efficient delivery of any other tasks reasonably requested by the F&B Manager or other Senior Manager.
  • Act as Duty Manager of the Club in the evenings and/or weekends when required.
  • Member of the Club’s Middle Management Team following completion of probation.

While full training will be given, the ideal candidate will possess the following qualifications and competencies:

  • The relevant catering qualifications. i.e. HND/Degree or equivalent in hospitality and catering management
  • Varied experience at management level, in similar high profile, high turnover sites.
  • Experience of managing all aspects of staff; including permanent, casual and seasonal staff contracts and sound HR knowledge
  • Train the trainer qualification with proven ability to train and develop staff to ensure quality service and standards are continuously met
  • Commercially minded; understanding seasonal trends of the industry, networking and developing contacts within the industry for the purpose of sharing knowledge
  • Exceptional customer care skills including respecting internal and external customers.
  • Able to demonstrate an understanding of the factors affecting commercial performance and results together with experience of a broad range of commercial F&B products and service
  • Intermediate food and hygiene qualifications and Level 3 food safety and able to demonstrate an in depth knowledge of both Health and Safety and hygiene.
  • Understanding of stock control and EPOS systems.
  • Sound understanding of P&L management and control with IT skills
  • Excellent communicator, both verbal and written. Have the ability to deal with complaints where appropriate and refer these to senior managers when necessary.
  • Calm under pressure and a positive attitude at all times
  • A particular attention to detail at all times.
  • Proven ability to motivate and manage a large catering team.
