An exciting opportunity has arisen for a full-time Head Chef/Kitchen Manager, used to Managing a fully branded kitchen, at our Grosvenor Casino in Golden Horseshoe, London. We are looking for a team player, who enjoys a challenge and feels they have the relevant experience for this great opportunity.

The ideal candidate will have been responsible for a high volume branded offering, ensuring that specs are adhered to for every dish served, following Company specification sheets.  The role requires an organised leader, able to develop their kitchen team to follow processes and procedures, whilst delivering a consistently high level of service.

Your key accountabilities will include:

~ Day to day control of the kitchen, making sure all company procedures are carried out, discipline in conjunction with management, hygiene, daily purchasing, stock takes, date coding and maintain required GP levels.

~ Monitoring standards to maintain highest standards of food and presentation.

~ Developing and planning new menus and organising functions.

~ Plans menus for all food service locations considering customer base, popularity of various dishes, controls holidays and all kitchen costs.

~ Schedules and co-ordinates the work of chefs, cooks, and other kitchen employees to ensure that food preparation is economical and technically correct.

~ Establishes controls to minimise food and supply waste.

~ Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation, and accident prevention principles.

~ Develops and tests recipes and techniques for food preparation and presentation which help to ensure consistent high quality and to minimise food costs; exercises portion control over all items served and assists in establishing menu selling prices.

~ Prepares necessary data for the budget in area of responsibility; projects annual food and labour costs and monitors actual financial results; takes corrective action where necessary to help ensure that financial goals are met.

~ Hires, trains, and supervises the work of food production staff.

The ideal candidate will:

~ Have a strong focus on customer service

~ Have attained an extensive knowledge and practical skills of food production and service within a commercial enterprise

~ Have the desire to continuously develop within the role

~ Demonstrate behaviours that support an understanding of the importance of teamwork

~ Be flexible with regards to shift times and willing and able to work night shifts and weekends

~ Possess a good standard of verbal English language skills

~ Be eligible to work within the UK

Salary is dependent upon experience and is competitive in the current market
