Tylney Hall, Hook, Hampshire, now has an exciting opportunity available for Pastry Chef to join our Fine Dining Brigade Join our new Head Chef, Mike Lloyd, who held three rosettes in his last position.

Mike is looking for talented, enthusiastic individuals who can join our friendly Pastry team with a view to development & promotion. Position and salary dependent on experience.

Tylney Hall is a beautiful 4 red star hotel in stunning gardens set in rural Hampshire. It has recently received the 'best kept secret' award by Facebook fans in the Laterooms.com Hotel of the Year competition - this was because of its charm, warmth and glorious parkland surroundings

Postion Overview:

The role of Pastry Chef is to be responsible and accountable for the production, control and issue of all pastry items in the kitchen in accordance with the company and hotel policies, procedures and standards.The role of Pastry Chef is to maintain high standards of customer satisfaction whilst ensuring the food cost is kept in line with approved budgets. The Pastry Chef should promote good working relations with other sections of the kitchen and all other departments and train and motivate the team, to nurture a coordinated, happy and well disciplined section.

Attributes/Experience:

You will be a fully qualified chef, ideally with patisserie qualification, have at least 3 years experience as a pastry chef with exposure to a variety of menu styles - 2 rosette (or similar) exposure desirable. You will be confident in your standards of ability in your specialist area. You should have well developed leadership skills and be very organised in your approach to work. You should have a good understanding of HCCAP procedures and implementation and conform to all food safety legislation. You will show a desire to develop and train the Commis, CDP's or occasional apprentices in the department and work with the Head Chef to encourage creativity and passion within the department. You will need to be aware that due to the nature of the business, the normal shift pattern will include split shifts, bank holidays and weekends, five days out of seven. We are in a rural location so own transport is essential.
