Who are we?

We are Derby’s local brewer with many awards for our beers, venues and business acumen a family run craft business with over 30 years brewing expertise in producing handcrafted premium real ales. We see a growing pub estate as a crucial part of our growth plans, to date we have acquired and fully renovated four award winning venues.  

We are passionate about quality and individuality, each of our venues are individual with their own style, drink food offering and soul. Our current venues include a specialist drinks pub (The Tap), a quirky city centre venue (Greyhound) focused around craft beer and street food and a destination cosy village pub (Queens Head) focused around great drinks and tasty Gastro style food and The Kedleston Country House a boutique hotel venue.

Across all our sites we are passionate about food and only produce & sell fresh, homemade food, which is made from scratch using the finest locally sourced ingredients.  

The Greyhound is one of Derby’s iconic venues and we are in the process of freshening things up. With a new look in house smoked menu, wood fired pizza alongside the much loved street food there’s plenty to be inspired by. In addition we are expanding our craft range with over 150 craft beer and ciders, the refurbishment will also include a craft beer bar and garden room, creating Derby’s first Smoke & Craft House.

The role

This is a hugely exciting opportunity to work at an iconic venue and to join our fantastic food team, joining a company with growing reputation for its food. You will work closely with your Head Chef & the Exec Chef with input into creating menus, from concept to the customer’s plate.  

The new menu will include our own in house smoked dishes, quirkly wood fired artisan pizza’s, street food and burgers with a Greyhound twist! A great chance to be part of creating something new and exciting for Derby!

Who are we looking for?

  • Experienced Sous chef or up and coming Chef De Partie looking to further their career
  • Passionate about food and a vision to create new and exciting dishes
  • A Knowledge of food costings, up to date with recent COSSH and HACCP
  • IT literate
  • Food Hygiene level 2 (level 3 would be an advantage)

Responsibilities of the role

  • Work alongside the head chef to in order to create a smooth, happy and profitable kitchen
  • Develop new menus and create spec sheets for new dishes fully costed to achieve optimum GP
  • Take control in the Head Chefs absence
  • Communicate effectively with other departments
  • Maintain a 5 star hygiene rating
  • Train and mentor junior team members

Skills

Experience in all areas of a kitchen including menu design, menu costing, consistently hitting GP targets, food hygiene, good time keeping, a food hygiene certificate, the ability to work during busy service, working quickly whilst maintaining high quality standards, with strong leadership and training skills and good time keeping is essential, experience with fresh artisan pizza’s would be looked on favourably.  

Hours of work

Due to the nature of the business the candidate must be flexible in terms of hours which will include weekend work.
