MAIN DUTIES:
Responsible in the absence of the F & B Manager for the entire food and beverage operation; manages co-workers and activities of the food and beverage outlets, catering services, while maintaining excellence in quality standards and guest/member relations.

RESPONSIBILITIES:
- Manages all food and beverage service outlets, which may include bar/lounge, restaurant, hot & cold display counter, catering department, kitchen, snack bar and refreshment buggy, and co-ordinates to achieve qualitative/quantitative goals and ensure guest/member satisfaction.
- Supports all Food & Beverage department co-workers, including training, scheduling, developing.
- Ensures that co-workers meet all standards for performance, appearance and service provision, determines assignments and division of responsibilities.
- Maintains existing food & beverage programmes and develops new concepts/strategies that ensure the highest possible quality of food service to meet guest/member expectations and assure repeat business.
- Ensures that company standards for service and quality are met.
- Ensures that all policies and procedures related to the operation of the Food & Beverage department are enforced and implemented appropriately, including personnel management, sanitation, food preparation and storage, alcoholic beverage service, cash and credit card processing, and health and safety.
- Implements and maintains effective inventory and shortage controls.
- Ensures that adequate inventories are maintained and storage is provided.
- Identifies new market opportunities and maximises sales potential through aggressive marketing of the property’s various Food & Beverage services and events, including, local awareness, brochures, digital, promotional events, etc.
- Recommends equipment to be used and is responsible for the proper selection of all food and beverage products in accordance with Company standards and/or national purchasing guidelines.
- Solicits and handles guest/member inquiries, comments, suggestions and concerns to provide answers or determine solutions. Follows up with guests/members to ensure satisfaction.
- Works with other departments to ensure efficiencies of operations.
- Maintains knowledge of local competition and general industry trends.

Minimum Qualifications
- Five GCSE passes, including English and Math’s, at grade C or above.
Knowledge and Skill Requirements
- Experience of managing staff
- Knowledge of food & beverage service
- Proficient in computer software including word processing
- Good time management, organisation and prioritisation skills
- Excellent communication skills
- Good presentation skills
- Self-starter and motivator
Working Conditions Full Time, Shift pattern that will include regular evenings, weekends and bank holidays.
