POSITION:                   Food and Beverage Manager at Thornbury Golf Centre

RESPONSIBLE TO:      General Manager

SALARY:                      Competitive

MAIN DUTIES:

Responsible for the entire food and beverage operation for the golf course; manages co-workers, budget, and activities of the food and beverage outlets, catering services and kitchen; and develops revenue and expense plans to maximise sales and profitability while maintaining excellence in quality and customer relations.

RESPONSIBILITIES:

  • Manages all food and beverage service outlets, which may include bar/lounge, restaurant, hot and cold display counter, catering department, kitchen, snack bar and refreshment buggy, and co-ordinates to achieve qualitative/quantitative goals and ensure customer satisfaction.
  • Leads all Food and Beverage department supervisors and co-workers, including hiring, training, scheduling, developing, evaluating, discipline and counselling.
  • Ensures that co-workers meet all standards for performance, appearance and service provision, determines assignments and division of responsibilities.
  • Maintains existing food and beverage programmes and develops new concepts/strategies that ensure the highest possible quality of food service to meet customer expectations and assure repeat business.
  • Ensures that corporate standards for service and quality are met.
  • Ensures that all policies and procedures related to the operation of the Food and Beverage department are enforced and implemented appropriately, including personnel management, sanitation, food preparation and storage, alcoholic beverage service, cash and credit card processing, and health and safety.
  • Manages and maintains purchasing system ensuring all invoices are managed effectively and accurately.
  • Creates and develops menus and prices, in conjunction with Chef, and ensures recipe cards are  completed to ensure minimum cost of sales and maximum profit.
  • Responsible for all food, beverage and supply purchases maximising corporate agreed supplier contracts.
  • Responsible for controlling food, beverage, and labour costs by accurately estimating needs for supplies and staffing.
  • Implements and maintains effective inventory and shortage controls.
  • Ensures that adequate inventories are maintained and storage is provided.
  • Approves or reviews all bookings for catered activities, i.e., banquets and meetings.
  • Identifies new market opportunities and maximises sales potential through aggressive marketing of the property’s various Food and Beverage services and events, including flyers, newspaper, telephone soliciting, brochures, promotional events, etc.
  • Recommends equipment to be used and is responsible for the proper selection of all food and beverage products in accordance with Company standards and/or national purchasing guidelines.
  • Solicits and handles customer inquiries, comments, suggestions and concerns to provide answers or determine solutions.  Follows up with guests/members to ensure satisfaction.
  • Conducts staff meetings with and post notices for co-workers to communicate goals, events and any changes to policy and/or procedure.
  • Completes various financial reports and budgets to keep management informed of goals and status, and to aid in making effective business decisions.  Responsible for all Food and Beverage department accounting and files.
  • Develops accurate and aggressive long and short range financial objectives and capital improvement. Analyses cost of menu items and events to ensure profitability.
  • Works with other departments to ensure efficiencies of operations.
  • Maintains an appropriate level of community/public affairs involvement to facilitate networking.
  • Maintains knowledge of local competition and general industry trends.
  • Complies with BGL personnel policies and procedures and health and safety procedures
  • To undertake any further duties as requested by the management.
