Pub vision is to be the first choice food pub in Tooting.
£20k in winter, forecasting up to £35 - 40k in summer, we haven’t had one yet.
Currently we are taking up to £7-9k/week in food. The TA lends itself to a food experience rather than a drinking pub. The days are steady leaving plenty of time to plan your events, the evenings filling with diners. Sunday’s our key food day taking up to £2.5k.
GM to have an appreciating for British seasonal food and be willing to take complete ownership for delivering this with the support of their Head Chef.
Requires an outgoing, hands on manger who will lead from the front. We need a real foodie as it is a proper gastro pub and used more for dining during the winter. Must be able to work nights and weekends, mostly straight shifts.
The garden will naturally lend itself to drinking in the summer. We are installing an external bar ahead of summer and will offer full service outside via our handheld terminals.
Multi facet experience would be advantageous; with several rooms available for private hire the pub can have a multitude of events happening at once.
A manager who can identify with our cliental to offer regular events enticing repeat visits. By day we cater to the local mothers of tooting and colliers wood with classes like baby yoga already a success. By night we have a lovely wine room screaming for a regular wine club. Someone who can handle lots of kids by day and boozy doctors on a Friday night. We are attracting a lot of first time parents, very young families a welcoming and accommodating person.
The upstairs bars presents an opportunity to grow drink sales through its more relaxed lounge feel, cocktails, wines it would all work with some accompanying sharing food.
Team consists of up to 10 BOH, 15-20 FOH (seasonal requirements) 2 managers and a Sales and Marketing Coordinator. This offers a willing GM the opportunity to expand their management skills as regular meetings are necessary in order to set and follow up on objectives.
